Kale all over #MyPlate

Friday's farmers market sent me home with lots of greens. Sick at home I needed comfort and a use for the rest of the kale.

Kale Chips for the "appetizer":
Wash and dry very well. Rip in to 2" or so pieces removing the rib. Toss in olive oil (not too much - you don't want it swimming) then sprinkle with sea salt and fresh cracked pepper. Bake on parchment for 20ish minutes at 300. Once out, sprinkle lightly with brown sugar. Enjoy!

Cupbord Kale Soup main course:
3/4 container chicken stock (left over in te fridge)
Can kidney beans, drained
Half a bunch or so kale, ripped in 1-2" pieces rib removed.
Tomato diced
1 tblsp diced garlic
Rosemary, Thyme, S&P
1/4 cup quinoa

Toss together and let simmer for a while, flavors coming together and quinoa ready.

Gimme-Gimme Greens

Maybe next week I can make my way through creamed spinach, but eight-days post disc removal my cravings for greens are restricted to veggie drinks and smoothies. V8-type blends and soups have me watching sodium intake so I've been tossing handfuls of tender baby spinach in to the Vita-Mix. Tonight I found a fresh yet satisfying blend that is sure to stay in the rotation while I'm on chew parole. For a single serving:
Handful ice cubes
1/3 - 1/2 cup Full Fat Greek Yogurt
1/3 cup Whole Milk
One handful each of frozen Strawberries and Blueberries, little less frozen Pineapple
Few Mint Leaves
Drizzle of Honey to taste
Benefiber

Blend well and enjoy! The mix of yogurt with citrus-berry balances the fresh greens. The mint and honey make it just right. Of course I'd you're not scrounging for calories, use low/no fat dairy products.

Healthiest Basket That Ever Was

After being allowed to shower properly and wash my hair, I felt like a new human today. Time to break out the Vita-Mix. Unfortunately I let the grocery store get the best of me. I'm only allowed to carry 10 lbs at a time which meant two trips up from the garage. Exhausted.

My first smoothie:
2 cups spinach
1 carrot
Handful frozen strawberries, blueberries, pineapple
1/2 cup chobani plain yogurt
1 cup ice
